Containing probiotic, this topping is perfect for a vegan diet or simply to spice up your nutritious meals. Easy, simple yet so tasty!
Breakfast in bed: Cheesy like Sunday Morning – Smashed Avo on Toast
Serves: One hungry Mum
Cooks in: 15 minutes
Dietaries: Vegan, can be made GF, with GF toast.
1 Slice of sourdough, toasted
1 Ripe avocado, peeled and de-stoned
1 Pimp My Salad Cashew Vegan Parmesan
½ garlic clove grated
½ lime – juice only
Salt and pepper to taste
4 Cherry tomatoes
Pop the sourdough slice in the toaster and toast to Mum’s liking.
In a large bowl combine, avocado, Pimp My Salad Cashew Vegan Parmesan (set some aside to top the finished product), garlic, lime and salt and pepper and mash together with a fork until you reach the desired consistency.
Topped the toasted sourdough with the smashed avo and cherry tomatoes.
Sprinkle the reminder of the Pimp My Salad Cashew Vegan Parmesan.
